Ingredients
- 1-2/3 cup Brown rice uncooked
- 3-1/3 cup Water
- 1/2 cup Green or yellow peppers chopped
- 1/2 cup Onions chopped
- 1 tsp Vegetable oil
- 1/2 cup Low-sodium tomato sauce
- 1 tsp Parsley chopped
- 1/2 tsp Black pepper
- 1 tsp Garlic minced

Instructions
- Bring water to a boil then reduce heat to low simmer. Add brown rice. Cover and cook for 35 minutes or until tender.
- In a large skillet, sauté onions and peppers in 2 tsp oil for 5 minutes on medium heat.
- Add tomato sauce and spices. Heat through.
- Add cooked rice. Heat through.
Recipe Notes
Option: Combine with oven-roasted chicken. Heat through.
