- 2 tbsp Vegetable oil
- 3 cloves Garlic
- 1 Medium green zucchini
- 1 Medium yellow zucchini
- 1 Medium red bell pepper
- 1 Medium yellow bell pepper
- 1 Shallot
- Pinch of salt pepper, paprika (optional)

Instructions
- Finely mince the garlic cloves. Cut zucchinis in half and then into 2-inch pieces. Cut red and yellow bell peppers in chunks. Slice shallot.
- Heat vegetable oil in a large skillet. Add garlic and allow to heat for 5 minutes. Add the rest of the vegetables and cook for another 10 minutes (until tender).
- Season with salt, pepper, and paprika (optional).
