Spanish Rice

Ingredients
  • 1-2/3 cup Brown rice uncooked
  • 3-1/3 cup Water
  • 1/2 cup Green or yellow peppers chopped
  • 1/2 cup Onions chopped
  • 1 tsp Vegetable oil
  • 1/2 cup Low-sodium tomato sauce
  • 1 tsp Parsley chopped
  • 1/2 tsp Black pepper
  • 1 tsp Garlic minced
Ingredients
  • 1-2/3 cup Brown rice uncooked
  • 3-1/3 cup Water
  • 1/2 cup Green or yellow peppers chopped
  • 1/2 cup Onions chopped
  • 1 tsp Vegetable oil
  • 1/2 cup Low-sodium tomato sauce
  • 1 tsp Parsley chopped
  • 1/2 tsp Black pepper
  • 1 tsp Garlic minced
Instructions
  1. Bring water to a boil then reduce heat to low simmer. Add brown rice. Cover and cook for 35 minutes or until tender.
  2. In a large skillet, sauté onions and peppers in 2 tsp oil for 5 minutes on medium heat.
  3. Add tomato sauce and spices. Heat through.
  4. Add cooked rice. Heat through.
Recipe Notes

Option: Combine with oven-roasted chicken. Heat through.
