Spanish Rice
Ingredients
  • 1-2/3cup Brown riceuncooked
  • 3-1/3cup Water
  • 1/2cup Green or yellow pepperschopped
  • 1/2cup Onionschopped
  • 1tsp Vegetable oil
  • 1/2cup Low-sodium tomato sauce
  • 1tsp Parsleychopped
  • 1/2tsp Black pepper
  • 1tsp Garlicminced
Instructions
  1. Bring water to a boil then reduce heat to low simmer. Add brown rice. Cover and cook for 35 minutes or until tender.
  2. In a large skillet, sauté onions and peppers in 2 tsp oil for 5 minutes on medium heat.
  3. Add tomato sauce and spices. Heat through.
  4. Add cooked rice. Heat through.

Option: Combine with oven-roasted chicken. Heat through.
